Colcannon - an Irish Halloween Classic

Calcannon is a traditional Irish Halloween dish, complete with all of the classic hearty ingredients you'd come to expect in Irish cooking.
 
As per the Barmbrack tradition we also look to hide some goodies in the mix - coins typically represent a prosperous financial year ahead - so we tend to make sure there are plenty of coins in the mix... who doesn't want a prosperous year!
 
Enjoy this delicious recipe and watch your teeth!

Ingredients:
  • 1-2 kg potatoes
    (yellow flesh like a desiree or
    dutch gold is best)
  • 4 pieces bacon
  • 6 Spring onions
  • 4 cloves of garlic
  • 150mL of cream
    • 2 tablespoons all-purpose flour
    • 2 1⁄2cups lamb or vegetable stock
    • salt & freshly ground black pepper
    • parsley chopped
    • chives chopped
    • 2 to 3 cups of tightly pressed cabbage and kale

    Method:

    Boil potatoes in salted water
    Cook finely chopped spring onions, garlic, bacon for 3-5 mins in frying pan, add cabbage & kale, plus stock and sauté until soft  
    Mash potatoes with butter and cream
    Add mixture from frying pan and mix
    Season to taste
    Add coins wrapped in foil
