Paddy's Traditional Soda

Wholemeal wheat flour:

High in fibre to remove fats and cholesterol, proteins, B-Vitamins for the nervous system, Calcium and Phosphorus - good for bone health.

Buttermilk:

A traditional fermented food rich in beneficial probiotic bacteria, low in fat and low in lactose (milk sugars), it works with Bi Carb Soda to leaven bread without the need to use yeast, it is rich in the minerals Calcium, Potassium and Phosphorus for cardiovascular health and Vitamins B12 and B2 important for the nervous system and the conversion of carbohydrates to energy. 

Bi-Carb of Soda:

Acts as a raising agent in bread, it is alkalising and has multiple health benefits.

Salt:

There are various forms of salt, we use a good sea salt. Processed breads are unhealthy as they use high amounts of salt, fats and sugars. Our breads are low salt so they're  a really good option for people who are looking to make healthier choices.

 

Seriously Seedy Soda

Seeds are naturally low in saturated fats and higher in Omega 3's. Pumpkin is high in Zinc often low in the diet and a co-factor in over 200 enzymatic processes in the body and important for male fertility.

Buttermilk:

Treacle:

Also known as molasses which often has healthier connotations - it is a sugar, and the byproduct of sugar refining, therefore high in minerals especially iron, magnesium and calcium. A little goes a long way and it is often seen as a health food when taken in moderation.

Healthy Spelty Soda

Wholegrain Spelt:

Spelt has a slightly sweet, mild nutty flavour, it is not a gluten free grain but is usually well tolerated and easier to digest by people who have wheat sensitivities as it is lower in gluten and an ancient grain with different properties to the modern day wheat grain.

Spelt contains the full spectrum of essential fatty acids and is high in protein and rich in silicate for healthy hair and skin. It is higher vitamins B1, B3, B6 for nervous system health and energy metabolism and the antioxidant Vitamin E, Calcium, Magnesium, Phosphorus and Selenium than modern commercially produced wheat grain and higher in the anti-inflammatory Essential Fatty Acids.

Flaxseeds:

Hailed with burning body fat, being high in omega-3s and charged with fibre, these little seeds can really fire up your metabolism

Honey:

We use locally sourced Australian local Honey and avoid the imported blends from China.

Extra Virgin Olive Oil:

It's unrefined and because it's extra virgin olive oil it's the first press and contains the majority of the health benefits. Studies have shown that a Mediterranean diet rich in olive oil may reduce the risk of developing chronic disease and increase life expectancy. Extra Virgin Olive oil taken as part of a balanced diet can help reduce the risk in certain cancers, modulate the blood triglycerides, and reduce inflammation. Compounds specific to olive oil, known as phenolics, seem to possess free radical scavenging properties and so may be able to reduce oxidative damage to DNA.

We use extra virgin olive oil, and real butter not margarine.

Don't forget our soda bread is yeast free, low in fat and low GI, therefore releases it's sugars more slowly into the body helping to control insulin levels, and keeping you satisfied and fuller for longer. Our soda bread is yeast free and has positive effects on the triclycerides and lipoprotein levels in the blood due to it's vitamin and mineral profile, low GI status, and fibre content.

Salt. We use as little as possible so it remains low salt product, we avoid using table salt and prefer to use sea salt, higher in nutrients and flavour.

Potato Bread

Potatoes:

Low in fat, high in soluble and insoluble fibre which helps to keep you full and satisfied for longer. They are a great source of energy needed for your daily activities, thinking, movement, digestion and cellular renewal. They are high in immune boost Vitamin C which is also a component of collagen so good for skin elasticity and health. They are also high in the minerals Potassium, Magnesium and Iron and B Vitamins especially B6 which is required to make the neurotransmitters necessary for regulation of moods and feelings of wellbeing.

Butter:

Butter when eaten in moderation as part of a wholefoods balance diet can have a wonderful positive impact on your health. It's rich in the most easily absorbable form of Vitamin A necessary for thyroid and adrenal health, has anti fungal properties, contains lecithin essential for brain health and cholesterol metabolism, is rich in anti oxidants, a rich source of Vitamin E and K, the minerals Selenium and Iodine also necessary for thyroid health,  it is rich in Vitamin D and has anti-cancer properties.

Gluten Free bread

Tapioca Flour:

A starch made from the root of the cassava plant, naturally low in fat and high in carbohydrates it's gluten free, a good source of Iron which helps the body carry oxygen through to the various parts and muscles of the body and deficiency can lead to low energy, shortness of breath and dizziness. It also has adequate amounts of Potassium which is an important component of cell and body fluids that help regulate heart rate, nerve transmission and blood pressure.

 

Rice Flour:

brown rice flour has higher levels of B Vitamins as they are stored in the husk of the grain, also most of the fiber is lost during the manufacture of white rice flour, mostly its made with a mix of both. Having a diet rich in fiber lowers your risk of developing diverticular disease, colon cancer and diseases, diabetes type-2, and hypertension.

Besan:

Has a nutty flavour and is made from chickpeas.  It is higher in protein and folate than normal wheat flour. It's also high in Vitamin B6, and B1 important for the production of energy, red blood cells and the neurotransmitter serotonin that regulates appetite and mood. It's high in minerals Iron, Magnesium and Phosphorus, helping to maintain vascular health, relax our muscles and regulate blood pressure.

Almond Meal:

Good for your health especially the heart and with a delicate flavour almond flour is versatile in bread and cake making. It is known to us as a nut but is actually the seed of the fruit of the almond tree. It is particularly high in the antioxidant Vitamin E and Biotin for hair and nails. It is high in health promoting monounsaturated fats that are associated with reduced risk of heart disease.  has a low GI and imparts lightness and flavour to this gluten free bread. 

Polenta:

Made from corn  you could source a flour made from GMO free corn. A low calorie food which is easy to digest it's high carbohydrate food rich in Vitamins A and C making it a good source of antioxidant powered caroteinoids with health benefits like cancer, AMD and heart disease prevention and skin damage. 

Sesame Seeds:

Another super seed packed with nutrition especially Calcium (prevents colon cancer, osteroporosis, PMS and Migraine), Copper (shown to have relief for Rheumatoid Arthritis symptoms), Manganese, Phosphorus and Magnesium (supports vascular and respiratory health) Iron,  Zinc (especially important for bone health in older men and fertility men), Molybdenum B1 and Selenium as well as lignans and phytosterols that have been shown to have a cholesterol lowering effect and help to prevent high blood pressure. Sesamin a compound found in sesame is also known to protect the liver from oxidative damage.

We use fresh yeast, not dried.

Guar Gum:

Is a soluble fibre made from the guar bean from India or Pakistan. It has functional food properties as well as practical properties when thickening and stabilising breads. It's been studied to treat diarrhea, IBS, obesity, diabetes, and may lower cholesterol, triglycerides, and LDL whilst balancing blood sugars.

Water

Gluten is a protein found in grains such as wheat, rhy, barley, oats and spelt and it's avoidance is essential part of managing celiac disease which is a condition that triggers an allergic immune system response to the protein gluten, even the tiniest crumb of normal gluten bread can trigger a response from a celiac so avoidance is crucial to their health. For those with gluten or wheat intolerance this bread or the Spelt bread may be a preferred option to minimise the effects of the gluten in wheat.
